Barbecued Beef

 

Korean Pulgoki (Barbecued Beef)

Ingredients:

1lb. Beef rib steak, cut into bite size pieces
2 tsp. Sesame seeds, roasted
a bunch Green onion (scallions), finely chopped
Vegetables of your taste like, Onion, Green pepper, Celery, Eggplant or Squash slices
How to make the marinade sauce:
1/2 medium Apple, quartered and sliced
1/4 lbs. Ginger root, thinly sliced
4 cloves Garlic, thinly sliced
2 cups Soy sauce
1 cup Cooking wine
1/2 cup Water
4 tbsp. White or Brown sugar
Procedure:

Make a sauce by mixing all ingredients of the marinade. Cook into high heat, bring to a boil and reduce heat and cook for another 15 minutes

then reduce heat again and simmer for 15 minutes; let stand to cool overnight.

When you're ready to cook, strain the mixture, add roasted sesame seeds and chopped green onion and mix roasted sesame seeds.

Rub the sauce into cube beefs with finger tips and marinate the meat for at least 1 hour. Heat the pulgoki grill over a charcoal fire and then barbecue the beef.

Use frying pan or an oven grill if you don't have a pulgoki grill.

Serve immediately for 6-8 people.

Useful hints on Barbecuing this delicious meat dish:

a) Preheat the grill well, then put straight the meat and turn when one side is done.

b) Cooking the beef to the medium rare stage over charcoal brings out the best flavor of the meat.

c) Traditionally, cooking is done at the table on a pulgoki grill over charcoal.

d) Never turn again since the meat loses its flavorful juice and becomes too crusty.

e) It is recommended to grill vegetables for nutritive balance and a change.

f) Cut green peppers length-wise into halves or quarters.

g) Cut squash, garlic and celery into 1/8 in slices for easy cooking.

h) Radicchio red lettuce can also be rolled with other accompaniments.

i) Cooking the beef to the medium rare stage over charcoal brings out the best flavor of the meat.

j) Traditionally, cooking is done at the table on a pulgoki grill over charcoal.
